Ingredients:

Chicken:

  • 1 tablespoon of butter
  • 1.5 lb of skinless, boneless chicken breast (4 small or 2 large, halved)
  • Pinch of salt
  • ¼ teaspoon of lemon pepper seasoning
  • ¼ teaspoon of paprika

Creamed Spinach:

  • 1 tablespoon of vegetable oil
  • 10 oz of fresh spinach
  • 4 minced garlic cloves
  • ⅔ cup of half and half
  • ⅔ cup of shredded mozzarella cheese

Additional Ingredients:

  • 1 tablespoon of vegetable oil
  • 4 oz of sliced mushrooms
  • 4 slices of cooked bacon, chopped
  • 4 slices of Pepper Jack or Monterey Jack Cheese with Jalapenos

Instructions:

  1. Preheat the oven to 375°F. Grease the bottom of a baking dish with butter.
  2. Season the chicken breasts generously on both sides with salt, lemon pepper seasoning, and a dash of paprika. Arrange them flat side down in the prepared baking dish and bake for 15-20 minutes until cooked through.
  3. For the creamed spinach, heat vegetable oil in a skillet over medium heat. Add spinach and cook covered for 1-2 minutes until wilted. Remove from heat and stir in minced garlic and half and half. Bring to a boil, then add shredded mozzarella cheese. Stir until melted and smooth. Season with salt to taste.
  4. In a separate pan, heat vegetable oil and caramelize sliced mushrooms over high-medium heat for 1-2 minutes. Avoid salting the mushrooms to enhance caramelization.
  5. Assemble the smothered chicken by topping each breast with creamed spinach, chopped bacon, cooked mushrooms, and slices of Pepper Jack cheese. Return to the oven and bake uncovered for an additional 15-20 minutes until chicken is cooked through and cheese is melted and bubbly.
  6. For a golden finish, broil for 2-4 minutes, ensuring not to burn the cheese.
