I recently experimented with this delightful recipe for the first time, and it was an instant hit with my guests, who couldn’t resist going back for seconds.

Ingredients:

  • 4 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cornstarch
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup ketchup
  • 1/2 cup apple cider vinegar
  • 2 tbsp. soy sauce
  • 1 tsp. garlic powder
  • 1/2 tsp. sea salt

Instructions:

  1. Preheat the oven to 325°F (165°C) and line a 13 x 9-inch baking pan with parchment paper. Set aside.
  2. Season the chicken breasts with salt and pepper.
  3. Place the cornstarch in a large ziplock bag, then add the chicken pieces. Shake the bag to coat the chicken evenly.
  4. In a shallow bowl, beat the eggs together. Heat the vegetable oil in a skillet over medium-high heat until it begins to sizzle.
  5. Dip each chicken piece into the beaten eggs, then transfer them to the skillet. Sear the chicken until golden brown, then transfer to the prepared baking pan.
  6. In a medium bowl, whisk together the granulated sugar, ketchup, apple cider vinegar, soy sauce, garlic powder, and sea salt until well combined.
  7. Pour the sweet and sour sauce over the chicken pieces in the baking pan.
  8. Bake in the preheated oven for 1 hour, tossing the chicken halfway through to ensure even cooking.
  9. Serve the baked sweet and sour chicken with rice for a delicious meal.
