Lemon Velvet Cake

Delicious Lemon Velvet Cake

Ingredients:

  • 1 1/4 cups of all-purpose flour
  • 1 1/2 cups of superfine sugar
  • 1/2 cup of softened butter
  • 1/2 cup of buttermilk
  • 1/4 cup of freshly squeezed lemon juice
  • Zest of 1 lemon
  • 2 large eggs
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract

Directions:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and superfine sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and lemon zest.
  4. In another bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the creamed mixture alternately with the buttermilk and lemon juice, starting and ending with the dry ingredients.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
