Lemon Velvet Cake
Delicious Lemon Velvet Cake
Ingredients:
- 1 1/4 cups of all-purpose flour
- 1 1/2 cups of superfine sugar
- 1/2 cup of softened butter
- 1/2 cup of buttermilk
- 1/4 cup of freshly squeezed lemon juice
- Zest of 1 lemon
- 2 large eggs
- 1 1/2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
Directions:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and superfine sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and lemon zest.
- In another bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture alternately with the buttermilk and lemon juice, starting and ending with the dry ingredients.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
