Succulent Garlic Butter Steak and Potatoes Skillet

Ingredients:

  • 1 piece of meat (e.g., top sirloin, filet mignon, New York strip, or rib eye)
  • 2 tsp olive oil
  • 4 tbsp vegetable oil, divided
  • 1 1/2 lbs top sirloin, cut into 1-inch pieces
  • 1 medium gold Yukon potato, cut into 3/4 inch wedges
  • Spice mix:
    • 1 tbsp garlic powder
    • 1 tbsp paprika
    • 1 tbsp brown sugar
    • 2 tsp onion powder
    • 2 tsp coriander or cumin
    • 2 tsp kosher salt
    • 1/2 tsp black pepper
    • 1/2 tsp chipotle chili pepper
  • Garlic Butter Sauce:
    • 2 tbsp unsalted butter
    • 4-6 garlic cloves, minced
    • 1 tbsp minced fresh parsley or 1 tsp dried
    • 1/2 tsp dried thyme

Instructions:

  1. In a small bowl, whisk together all the seasoning mix ingredients. Set aside two tablespoons for the potatoes. Pat dry the steak and sprinkle the remaining seasoning mixture evenly over it. Set aside.
  2. Place the potatoes and 1/2 cup of water in a microwave-safe dish. Microwave for 6-7 minutes until barely soft. Drain and let dry. Drizzle with 1 tbsp olive oil and season with the reserved seasoning mixture. Stir to coat evenly.
  3. Heat 1 tbsp olive oil in a 12-inch cast iron pan over medium heat. Add the potatoes and cook for 1-2 minutes until they begin to brown, flipping occasionally. Remove to a plate and cover with foil.
  4. Wipe the pan and heat 2 tbsp vegetable oil over medium-high heat. Add half of the steak in a single layer and sear for 2 minutes. Flip and cook for an additional minute or to desired doneness. Remove to a plate and repeat with the remaining steak.
  5. Once the pan is empty, heat 2 tbsp vegetable oil over medium-high heat. Add the remaining steak and sear for 2 minutes without stirring. Stir in the butter, garlic, parsley, oregano, and thyme. Cook for a minute, then remove from heat.
  6. Add the cooked steaks and potatoes to the skillet, stirring to coat evenly in the butter sauce. Season with additional salt and pepper to taste. Serve immediately. Enjoy your flavorful garlic butter steak and potatoes skillet!
