Ingredients:

  • 4 eggs
  • 250g of all-purpose flour
  • 30 cl of milk
  • 4 tablespoons of granulated sugar
  • 2 tablespoons of baking powder
  • 2 pinches of salt or fine salt
  • Oil for greasing

Instructions:

  1. Begin by separating the egg whites from the yolks.
  2. In a mixing bowl, combine the egg yolks with the milk, stirring until well incorporated.
  3. Add in the granulated sugar, all-purpose flour, baking powder, and salt, continuing to mix until a smooth batter forms.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the batter until evenly combined.
  6. Heat a frying pan over medium heat and grease it lightly with oil.
  7. Using a ladle, pour 2 to 3 small portions of the batter onto the pan, ensuring to space them apart.
  8. Cook the pancakes for about a minute on each side, or until they are golden brown and cooked through.
  9. Transfer the cooked pancakes onto a plate and continue cooking the remaining batter in batches.
  10. Serve the pancakes hot, accompanied by maple syrup and pecans for a delicious breakfast or brunch treat.
